  • 1 ยฝ cups sushi rice
  • 2 cups water
  • 2 tbsp rice vinegar
  • 1 lb sushi-grade salmon
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp orange juice
  • 1 tbsp rice vinegar
  • 1 medium cucumber
  • 1 large avocado
  • 1 cup carrots
  • 1 cup edamame
  • ยฝ cup crispy fried onions
  • sesame seeds
  • 2 stalks green onions

How to Make It

  1. 1Rinse sushi rice until water runs clear.
  2. 2Cook with water according to package instructions.
  3. 3While warm, toss cooked rice with rice vinegar and let cool slightly.
  4. 4In a bowl, gently mix salmon with soy sauce and sesame oil.
  5. 5Prepare ponzu dressing by whisking together soy sauce, lime juice, orange juice, and rice vinegar.
  6. 6Arrange rice in serving bowls.
  7. 7Top with salmon, cucumber, avocado, carrots, and edamame.
  8. 8Drizzle with ponzu dressing.
  9. 9Finish with crispy onions, sesame seeds, and green onions.
  10. 10Serve immediately.
