Grilled Acapulco-Style Steak Tacos with Fresh Pico & Cotija

  • 1 ½ lb flank or skirt steak
  • 1 tbsp olive oil
  • 2 tbsp lime juice
  • 3 cloves garlic
  • 1 tsp ground cumin
  • salt
  • black pepper
  • 3 medium roma tomatoes
  • ½ cup red onion
  • 1 small jalapeño
  • ½ cup cilantro
  • 1 tbsp lime juice
  • salt
  • 8 pieces corn tortillas
  • ½ cup cotija cheese
  • 1 whole lime wedges

How to Make It

  1. 1In a bowl, combine olive oil, lime juice, garlic, cumin, salt, and pepper.
  2. 2Rub over steak and marinate for 15–30 minutes.
  3. 3Preheat grill or grill pan to medium-high heat.
  4. 4Grill steak for 4–5 minutes per side until desired doneness.
  5. 5Let rest for 5 minutes.
  6. 6Thinly slice steak against the grain.
  7. 7In a bowl, combine tomatoes, red onion, jalapeño, cilantro, lime juice, and salt to make pico de gallo.
  8. 8Warm tortillas in a dry skillet or over a flame.
  9. 9Assemble tacos with sliced steak, pico de gallo, and crumbled cotija cheese.
  10. 10Serve with lime wedges on the side.
