Korean-Style Pork Street Tacos with Spicy Sriracha Mayo & Crunchy Slaw

- 1 ½ lb pork shoulder
- ¼ cup soy sauce
- 2 tbsp brown sugar
- 3 cloves garlic
- 1 tbsp fresh ginger
- 1 tbsp sesame oil
- 3 cups green cabbage
- 1 cup carrots
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp sesame oil
- salt
- ½ cup mayonnaise
- 1 tbsp sriracha
- 1 tbsp lime juice
- 8 pieces corn tortillas
- 3 stalks green onions
- sesame seeds
How to Make It
- 1In a bowl, combine soy sauce, brown sugar, garlic, ginger, and sesame oil to create the marinade.
- 2Add pork and toss to coat.
- 3Marinate for at least 15–30 minutes.
- 4In a separate bowl, combine cabbage, carrots, rice vinegar, honey, sesame oil, and salt to make the slaw.
- 5Toss and set aside.
- 6Mix mayonnaise, sriracha, and lime juice to create the sriracha mayo.
- 7Heat a skillet over medium-high heat and cook pork in batches until caramelized and cooked through, about 6–8 minutes.
- 8Warm tortillas in a dry pan or over an open flame.
- 9Assemble tacos with pork, slaw, and a drizzle of sriracha mayo.
- 10Garnish with green onions and sesame seeds if desired.
- 11Serve immediately.
