Korean-Style Pork Street Tacos with Spicy Sriracha Mayo & Crunchy Slaw

  • 1 ½ lb pork shoulder
  • ¼ cup soy sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 1 tbsp sesame oil
  • 3 cups green cabbage
  • 1 cup carrots
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil
  • salt
  • ½ cup mayonnaise
  • 1 tbsp sriracha
  • 1 tbsp lime juice
  • 8 pieces corn tortillas
  • 3 stalks green onions
  • sesame seeds

How to Make It

  1. 1In a bowl, combine soy sauce, brown sugar, garlic, ginger, and sesame oil to create the marinade.
  2. 2Add pork and toss to coat.
  3. 3Marinate for at least 15–30 minutes.
  4. 4In a separate bowl, combine cabbage, carrots, rice vinegar, honey, sesame oil, and salt to make the slaw.
  5. 5Toss and set aside.
  6. 6Mix mayonnaise, sriracha, and lime juice to create the sriracha mayo.
  7. 7Heat a skillet over medium-high heat and cook pork in batches until caramelized and cooked through, about 6–8 minutes.
  8. 8Warm tortillas in a dry pan or over an open flame.
  9. 9Assemble tacos with pork, slaw, and a drizzle of sriracha mayo.
  10. 10Garnish with green onions and sesame seeds if desired.
  11. 11Serve immediately.
