Smoky Al Pastor Pork Tacos with Pineapple & Chipotle

  • 1 ½ lb pork shoulder
  • 1 cup pineapple
  • 2 pieces chipotle peppers in adobo
  • 3 cloves garlic
  • ¼ cup orange juice
  • 2 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp oregano
  • salt
  • 8 pieces corn tortillas
  • ½ cup red onion
  • ½ cup cilantro
  • 1 whole lime wedges
  • cotija cheese

How to Make It

  1. 1In a bowl, combine orange juice, lime juice, chipotle peppers, garlic, cumin, paprika, oregano, and salt to create the marinade.
  2. 2Add sliced pork to the marinade and toss to coat.
  3. 3Let marinate for at least 15–30 minutes.
  4. 4Heat a large skillet or grill pan over medium-high heat.
  5. 5Cook marinated pork in batches until browned and slightly crispy, about 6–8 minutes.
  6. 6Add diced pineapple to the pan and cook for 2–3 minutes until lightly caramelized.
  7. 7Warm tortillas in a dry skillet or directly over a flame.
  8. 8Assemble tacos by filling tortillas with pork and pineapple mixture.
  9. 9Top with diced onion, cilantro, and a squeeze of lime.
  10. 10Add cotija cheese if desired and serve immediately.
