Chicken Chili Verde with Lime Crema & Fresh Cilantro

- 1 ½ lb boneless chicken thighs
- 1 tbsp olive oil
- 1 lb tomatillos
- 2 whole poblano peppers
- 1 small jalapeño
- 1 medium onion
- 3 cloves garlic
- 1 cup chicken broth
- 1 tsp cumin
- salt
- ½ cup sour cream
- 1 tbsp lime juice
- salt
- ½ cup fresh cilantro
How to Make It
- 1Heat olive oil in a large pot over medium heat.
- 2Add onion and cook until softened.
- 3Add garlic and cook for 1 minute until fragrant.
- 4Add tomatillos, jalapeño, and chicken broth.
- 5Simmer for 10–15 minutes until tomatillos soften.
- 6Blend the mixture until smooth, then return to the pot.
- 7Add chopped roasted poblano peppers, cumin, and salt.
- 8Add chicken and simmer for 20–25 minutes until cooked through and tender.
- 9Shred or chunk chicken as desired and stir back into the sauce.
- 10In a small bowl, mix sour cream, lime juice, and salt to make lime crema.
- 11Serve chili verde topped with lime crema and fresh cilantro.
