Chicken Chili Verde with Lime Crema & Fresh Cilantro

  • 1 ½ lb boneless chicken thighs
  • 1 tbsp olive oil
  • 1 lb tomatillos
  • 2 whole poblano peppers
  • 1 small jalapeño
  • 1 medium onion
  • 3 cloves garlic
  • 1 cup chicken broth
  • 1 tsp cumin
  • salt
  • ½ cup sour cream
  • 1 tbsp lime juice
  • salt
  • ½ cup fresh cilantro

How to Make It

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add onion and cook until softened.
  3. 3Add garlic and cook for 1 minute until fragrant.
  4. 4Add tomatillos, jalapeño, and chicken broth.
  5. 5Simmer for 10–15 minutes until tomatillos soften.
  6. 6Blend the mixture until smooth, then return to the pot.
  7. 7Add chopped roasted poblano peppers, cumin, and salt.
  8. 8Add chicken and simmer for 20–25 minutes until cooked through and tender.
  9. 9Shred or chunk chicken as desired and stir back into the sauce.
  10. 10In a small bowl, mix sour cream, lime juice, and salt to make lime crema.
  11. 11Serve chili verde topped with lime crema and fresh cilantro.
