Grilled Chimichurri Pork Chops with Roasted Chayote & Smoked Almonds

- 4 pieces bone-in pork chops
- 1 tbsp olive oil
- salt
- black pepper
- 1 cup fresh parsley
- 3 cloves garlic
- 2 tbsp red wine vinegar
- ½ cup olive oil
- ½ tsp red pepper flakes

- 2 large chayote
- 1 tbsp olive oil
- salt
- ½ cup smoked almonds
How to Make It
- 1Preheat oven to 425°F (220°C).
- 2Toss chayote with olive oil and salt.
- 3Spread on a baking sheet and roast for 25–30 minutes until tender and lightly browned.
- 4In a bowl, mix parsley, garlic, red wine vinegar, olive oil, red pepper flakes, and salt to make chimichurri.
- 5Season pork chops with olive oil, salt, and pepper.
- 6Grill or pan-sear pork chops over medium-high heat for 4–6 minutes per side until cooked through.
- 7Let rest.
- 8Serve pork chops topped with chimichurri.
- 9Plate with roasted chayote and sprinkle with smoked almonds.
