Grilled Chimichurri Pork Chops with Roasted Chayote & Smoked Almonds

  • 4 pieces bone-in pork chops
  • 1 tbsp olive oil
  • salt
  • black pepper
  • 1 cup fresh parsley
  • 3 cloves garlic
  • 2 tbsp red wine vinegar
  • ½ cup olive oil
  • ½ tsp red pepper flakes
  • salt
  • 2 large chayote
  • 1 tbsp olive oil
  • salt
  • ½ cup smoked almonds

How to Make It

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss chayote with olive oil and salt.
  3. 3Spread on a baking sheet and roast for 25–30 minutes until tender and lightly browned.
  4. 4In a bowl, mix parsley, garlic, red wine vinegar, olive oil, red pepper flakes, and salt to make chimichurri.
  5. 5Season pork chops with olive oil, salt, and pepper.
  6. 6Grill or pan-sear pork chops over medium-high heat for 4–6 minutes per side until cooked through.
  7. 7Let rest.
  8. 8Serve pork chops topped with chimichurri.
  9. 9Plate with roasted chayote and sprinkle with smoked almonds.
