Crispy Rice Pork Chop with Charred Broccoli & Blue Cheese

  • 4 pieces bone-in or boneless pork chops
  • 1 tbsp olive oil
  • salt
  • black pepper
  • 3 cups cooked white rice
  • 1 tbsp neutral oil
  • 1 tbsp soy sauce
  • 1 lb broccoli florets
  • 1 tbsp olive oil
  • 2 cloves garlic
  • ½ cup blue cheese
  • salt

How to Make It

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss broccoli with olive oil, garlic, and salt.
  3. 3Roast for 15–20 minutes until charred and tender.
  4. 4Sprinkle with blue cheese while warm.
  5. 5Season pork chops with olive oil, salt, and pepper.
  6. 6Heat a skillet over medium-high heat and sear pork chops for 4–5 minutes per side until cooked through.
  7. 7Let rest.
  8. 8In another skillet, heat oil and press rice into an even layer.
  9. 9Cook undisturbed until the bottom is crispy and golden.
  10. 10Drizzle soy sauce over rice and break into crispy pieces.
  11. 11Serve pork chops over crispy rice with charred blue cheese broccoli on the side.
