Crispy Rice Pork Chop with Charred Broccoli & Blue Cheese

- 4 pieces bone-in or boneless pork chops
- 1 tbsp olive oil
- salt
- black pepper
- 3 cups cooked white rice
- 1 tbsp neutral oil
- 1 tbsp soy sauce
- 1 lb broccoli florets
- 1 tbsp olive oil
- 2 cloves garlic
- ½ cup blue cheese
- salt
How to Make It
- 1Preheat oven to 425°F (220°C).
- 2Toss broccoli with olive oil, garlic, and salt.
- 3Roast for 15–20 minutes until charred and tender.
- 4Sprinkle with blue cheese while warm.
- 5Season pork chops with olive oil, salt, and pepper.
- 6Heat a skillet over medium-high heat and sear pork chops for 4–5 minutes per side until cooked through.
- 7Let rest.
- 8In another skillet, heat oil and press rice into an even layer.
- 9Cook undisturbed until the bottom is crispy and golden.
- 10Drizzle soy sauce over rice and break into crispy pieces.
- 11Serve pork chops over crispy rice with charred blue cheese broccoli on the side.
