Spicy Korean Pork Medallions with Sriracha Marinade & Tangy Crunch Slaw

- 1 ½ lb pork tenderloin
- 1 tbsp neutral oil
- 3 tbsp soy sauce
- 1 tbsp sriracha
- 2 tbsp brown sugar
- 3 cloves garlic
- 1 tbsp fresh ginger
- 1 tsp sesame oil
- 3 cups green cabbage
- 1 cup carrots
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp sesame oil
- salt
- 3 stalks green onions
- sesame seeds
How to Make It
- 1In a bowl, whisk together soy sauce, sriracha, brown sugar, garlic, ginger, and sesame oil.
- 2Add pork medallions and toss to coat.
- 3Marinate for at least 15–30 minutes.
- 4In a separate bowl, combine cabbage, carrots, rice vinegar, honey, sesame oil, and salt.
- 5Toss and set aside.
- 6Heat oil in a skillet or grill pan over medium-high heat.
- 7Cook pork medallions for 3–4 minutes per side until caramelized and cooked through.
- 8Let pork rest briefly before serving.
- 9Serve pork with rice vinegar slaw on the side or underneath.
- 10Garnish with green onions and sesame seeds if desired.
