  • 4 pieces sirloin steak
  • 1 tbsp olive oil
  • salt
  • black pepper
  • 4 tbsp butter
  • 2 tbsp parsley
  • 1 clove garlic
  • 1 tsp lemon zest
  • salt
  • 3 large russet potatoes
  • 2 tbsp olive oil
  • 1 tbsp truffle oil
  • ½ cup parmesan cheese
  • salt
  • 1 lb green beans
  • 1 tbsp butter
  • salt

How to Make It

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss fries with olive oil and salt.
  3. 3Spread on a baking sheet and roast for 25–30 minutes until crispy.
  4. 4In a bowl, mix softened butter with parsley, garlic, lemon zest, and salt.
  5. 5Set aside.
  6. 6Season steaks with olive oil, salt, and pepper.
  7. 7Heat a skillet over medium-high heat and sear steaks for 3–5 minutes per side until desired doneness.
  8. 8Let rest.
  9. 9Toss hot fries with truffle oil and grated parmesan.
  10. 10In a pan, sauté green beans with butter and salt until tender-crisp.
  11. 11Serve steaks topped with herb butter alongside truffle frites and green beans.
