French-Style Steak Moutarde with Sweet Potato Wedges & Mustard Cream

- 4 pieces sirloin or strip steak
- 1 tbsp olive oil
- salt
- black pepper
- 1 small shallot
- 2 tbsp dijon mustard
- 1 tbsp whole grain mustard
- ¾ cup heavy cream
- 1 tbsp butter
- ¼ cup white wine or broth
- 3 large sweet potatoes
- 2 tbsp olive oil
- 1 tsp smoked paprika
- salt
How to Make It
- 1Preheat oven to 425°F (220°C).
- 2Toss sweet potato wedges with olive oil, smoked paprika, and salt.
- 3Roast for 25–30 minutes until tender and caramelized.
- 4Season steaks with olive oil, salt, and pepper.
- 5Heat a skillet over medium-high heat and sear steaks for 3–5 minutes per side until desired doneness.
- 6Remove and let rest.
- 7In the same skillet, melt butter and sauté shallot until softened.
- 8Deglaze with white wine or broth and simmer briefly.
- 9Stir in Dijon mustard, whole grain mustard, and cream.
- 10Simmer until slightly thickened.
- 11Return steaks to the pan briefly or spoon sauce over plated steaks.
- 12Serve steaks with mustard cream sauce and roasted sweet potato wedges.
