French-Style Steak Moutarde with Sweet Potato Wedges & Mustard Cream

  • 4 pieces sirloin or strip steak
  • 1 tbsp olive oil
  • salt
  • black pepper
  • 1 small shallot
  • 2 tbsp dijon mustard
  • 1 tbsp whole grain mustard
  • ¾ cup heavy cream
  • 1 tbsp butter
  • ¼ cup white wine or broth
  • 3 large sweet potatoes
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • salt

How to Make It

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss sweet potato wedges with olive oil, smoked paprika, and salt.
  3. 3Roast for 25–30 minutes until tender and caramelized.
  4. 4Season steaks with olive oil, salt, and pepper.
  5. 5Heat a skillet over medium-high heat and sear steaks for 3–5 minutes per side until desired doneness.
  6. 6Remove and let rest.
  7. 7In the same skillet, melt butter and sauté shallot until softened.
  8. 8Deglaze with white wine or broth and simmer briefly.
  9. 9Stir in Dijon mustard, whole grain mustard, and cream.
  10. 10Simmer until slightly thickened.
  11. 11Return steaks to the pan briefly or spoon sauce over plated steaks.
  12. 12Serve steaks with mustard cream sauce and roasted sweet potato wedges.
