Crispy Japanese-Style Fish & Chips with Roasted Sweet Potato Fries

  • 1 lb white fish fillets
  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • 1 tsp baking powder
  • ¾ cup cold sparkling water
  • neutral oil
  • salt
  • 2 large sweet potatoes
  • 2 tbsp olive oil
  • salt
  • ½ cup kewpie mayonnaise
  • 1 tsp rice vinegar
  • 1 tsp sriracha

How to Make It

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss sweet potato fries with olive oil and salt.
  3. 3Spread on a baking sheet and roast for 25–30 minutes until tender and crispy.
  4. 4Heat oil in a deep pan to 350°F (175°C).
  5. 5In a bowl, whisk together flour, cornstarch, baking powder, and cold sparkling water to form a light batter.
  6. 6Season fish lightly with salt, then dip into batter.
  7. 7Fry fish in batches until golden and crispy, about 3–4 minutes.
  8. 8Drain on paper towels.
  9. 9In a small bowl, mix kewpie mayonnaise, rice vinegar, and sriracha to create a dipping sauce (optional).
  10. 10Serve crispy fish with roasted sweet potato fries and dipping sauce.
