Crispy Japanese-Style Fish & Chips with Roasted Sweet Potato Fries

- 1 lb white fish fillets
- ½ cup all-purpose flour
- ¼ cup cornstarch
- 1 tsp baking powder
- ¾ cup cold sparkling water

- 2 large sweet potatoes
- 2 tbsp olive oil
- salt
- ½ cup kewpie mayonnaise
- 1 tsp rice vinegar
- 1 tsp sriracha
How to Make It
- 1Preheat oven to 425°F (220°C).
- 2Toss sweet potato fries with olive oil and salt.
- 3Spread on a baking sheet and roast for 25–30 minutes until tender and crispy.
- 4Heat oil in a deep pan to 350°F (175°C).
- 5In a bowl, whisk together flour, cornstarch, baking powder, and cold sparkling water to form a light batter.
- 6Season fish lightly with salt, then dip into batter.
- 7Fry fish in batches until golden and crispy, about 3–4 minutes.
- 8Drain on paper towels.
- 9In a small bowl, mix kewpie mayonnaise, rice vinegar, and sriracha to create a dipping sauce (optional).
- 10Serve crispy fish with roasted sweet potato fries and dipping sauce.
