Grilled Balsamic Shrimp Skewers with Herb Rice, Charred Vegetables & Tomato Relish

- 1 lb large shrimp
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- 3 cloves garlic
- 1 tbsp honey

- 1 medium zucchini
- 1 whole red bell pepper
- 1 medium red onion
- 1 tbsp olive oil
- salt
- 1 ½ cups white rice
- 3 cups water
- ½ cup fresh parsley
- ½ tsp salt
- 1 cup cherry tomatoes
- ¼ cup red onion
- 1 tbsp olive oil
- 1 tbsp lemon juice
- salt
How to Make It
- 1In a bowl, whisk together balsamic vinegar, olive oil, garlic, honey, salt, and pepper.
- 2Add shrimp and marinate for 15–20 minutes.
- 3Cook rice by combining rice, water, and salt.
- 4Bring to a boil, reduce heat, cover, and simmer for 15 minutes.
- 5Fluff and stir in parsley.
- 6Preheat grill or grill pan to medium-high heat.
- 7Thread shrimp onto skewers.
- 8Toss vegetables with olive oil and salt, then grill until tender and slightly charred, about 6–8 minutes.
- 9Grill shrimp skewers for 2–3 minutes per side until pink and cooked through.
- 10In a bowl, combine tomatoes, red onion, olive oil, lemon juice, and salt to make the relish.
- 11Serve shrimp skewers with grilled vegetables, parsley rice, and tomato relish.
