Grilled Steelhead Trout with Honey Mustard Glaze, Tomato-Dill Relish & Asparagus

  • 4 pieces steelhead trout fillets
  • 1 tbsp olive oil
  • salt
  • black pepper
  • 2 tbsp dijon mustard
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1 cup cherry tomatoes
  • 2 tbsp fresh dill
  • ¼ cup red onion
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • salt
  • 1 lb asparagus
  • 1 tbsp olive oil
  • salt
  • black pepper

How to Make It

  1. 1Preheat grill to medium heat.
  2. 2Brush trout with olive oil and season with salt and pepper.
  3. 3In a small bowl, whisk together Dijon mustard, honey, and lemon juice to make the glaze.
  4. 4Grill trout skin-side down for 4–5 minutes, then flip and cook another 3–4 minutes, brushing with glaze during the last few minutes.
  5. 5Toss asparagus with olive oil, salt, and pepper.
  6. 6Grill or roast until tender, about 6–8 minutes.
  7. 7In a bowl, combine cherry tomatoes, dill, red onion, olive oil, lemon juice, and salt to make the relish.
  8. 8Serve trout topped with tomato-dill relish alongside asparagus.
