Grilled Steelhead Trout with Honey Mustard Glaze, Tomato-Dill Relish & Asparagus

- 4 pieces steelhead trout fillets
- 1 tbsp olive oil
- salt
- black pepper
- 2 tbsp dijon mustard
- 2 tbsp honey
- 1 tbsp lemon juice
- 1 cup cherry tomatoes
- 2 tbsp fresh dill
- ¼ cup red onion
- 1 tbsp olive oil
- 1 tbsp lemon juice
- salt
- 1 lb asparagus
- 1 tbsp olive oil
- salt
- black pepper
How to Make It
- 1Preheat grill to medium heat.
- 2Brush trout with olive oil and season with salt and pepper.
- 3In a small bowl, whisk together Dijon mustard, honey, and lemon juice to make the glaze.
- 4Grill trout skin-side down for 4–5 minutes, then flip and cook another 3–4 minutes, brushing with glaze during the last few minutes.
- 5Toss asparagus with olive oil, salt, and pepper.
- 6Grill or roast until tender, about 6–8 minutes.
- 7In a bowl, combine cherry tomatoes, dill, red onion, olive oil, lemon juice, and salt to make the relish.
- 8Serve trout topped with tomato-dill relish alongside asparagus.
