Spiced Samosa Burrito with Crispy Jalapeños & Fresh Mango Salsa

  • 3 medium russet potatoes
  • 1 cup green peas
  • 1 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • ½ tsp ground turmeric
  • 1 tsp ground coriander
  • 2 cloves garlic
  • 1 tbsp ginger
  • 1 tbsp lemon juice
  • salt
  • 1 large mango
  • ¼ cup red onion
  • 2 tbsp cilantro
  • 1 tbsp lime juice
  • salt
  • 2 large jalapeños
  • ½ cup all-purpose flour
  • vegetable oil
  • 4 pieces large flour tortillas
  • ½ cup plain yogurt

How to Make It

  1. 1Boil diced potatoes in salted water until fork-tender, about 10–12 minutes.
  2. 2Drain and set aside.
  3. 3Heat oil in a pan over medium heat.
  4. 4Add cumin seeds and toast until fragrant.
  5. 5Add garlic and ginger, cooking briefly until aromatic.
  6. 6Add cooked potatoes, peas, garam masala, turmeric, coriander, and salt.
  7. 7Mash lightly and cook for 3–5 minutes.
  8. 8Stir in lemon juice and remove from heat.
  9. 9Prepare mango salsa by combining mango, red onion, cilantro, lime juice, and salt.
  10. 10Mix well and chill.
  11. 11Coat sliced jalapeños in flour.
  12. 12Fry in hot oil until crispy and golden.
  13. 13Drain on paper towels.
  14. 14Warm tortillas until pliable.
  15. 15Assemble burritos by layering samosa filling, mango salsa, crispy jalapeños, and a drizzle of yogurt.
  16. 16Wrap tightly and serve immediately.
