Spiced Samosa Burrito with Crispy Jalapeños & Fresh Mango Salsa

- 3 medium russet potatoes
- 1 cup green peas
- 1 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 tsp garam masala
- ½ tsp ground turmeric
- 1 tsp ground coriander
- 2 cloves garlic
- 1 tbsp ginger
- 1 tbsp lemon juice
- salt
- 1 large mango
- ¼ cup red onion
- 2 tbsp cilantro
- 1 tbsp lime juice
- salt
- 2 large jalapeños
- ½ cup all-purpose flour
- vegetable oil
- 4 pieces large flour tortillas
- ½ cup plain yogurt
How to Make It
- 1Boil diced potatoes in salted water until fork-tender, about 10–12 minutes.
- 2Drain and set aside.
- 3Heat oil in a pan over medium heat.
- 4Add cumin seeds and toast until fragrant.
- 5Add garlic and ginger, cooking briefly until aromatic.
- 6Add cooked potatoes, peas, garam masala, turmeric, coriander, and salt.
- 7Mash lightly and cook for 3–5 minutes.
- 8Stir in lemon juice and remove from heat.
- 9Prepare mango salsa by combining mango, red onion, cilantro, lime juice, and salt.
- 10Mix well and chill.
- 11Coat sliced jalapeños in flour.
- 12Fry in hot oil until crispy and golden.
- 13Drain on paper towels.
- 14Warm tortillas until pliable.
- 15Assemble burritos by layering samosa filling, mango salsa, crispy jalapeños, and a drizzle of yogurt.
- 16Wrap tightly and serve immediately.
