Spanish-Style Roasted Chicken with Patatas Bravas & Smoky Tomato Sauce

  • 4 pieces chicken breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika

  • 3 large russet potatoes
  • 2 tbsp olive oil

  • 1 cup crushed tomatoes
  • 1 tsp smoked paprika

  • 1 tsp red wine vinegar

  • 1 lb green beans
  • 1 tbsp olive oil

How to Make It

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss potatoes with olive oil and salt.
  3. 3Spread on a baking sheet and roast for 30–35 minutes until crispy and golden.
  4. 4Rub chicken with olive oil, smoked paprika, garlic, salt, and pepper.
  5. 5Place chicken on a baking sheet or alongside potatoes and roast for 20–25 minutes until cooked through.
  6. 6In a saucepan, heat olive oil and garlic, then add crushed tomatoes, smoked paprika, vinegar, and salt.
  7. 7Simmer for 10–15 minutes.
  8. 8In a skillet, sauté green beans with olive oil, garlic, and salt until tender-crisp.
  9. 9Serve chicken with roasted potatoes topped with smoky tomato sauce and green beans on the side.
