Sriracha Garlic Sweet Potato Bowl with Avocado & Snap Peas

  • 3 large sweet potatoes
  • 2 tbsp olive oil
  • salt
  • 2 tbsp sriracha
  • 1 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic
  • 1 tbsp lime juice
  • 2 cups sugar snap peas
  • 2 whole avocado
  • 2 cups rice or quinoa
  • sesame seeds
  • 3 stalks green onions

How to Make It

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss sweet potatoes with olive oil and salt.
  3. 3Roast for 20–25 minutes until tender and caramelized.
  4. 4In a bowl, whisk together sriracha, soy sauce, honey or maple syrup, garlic, and lime juice.
  5. 5Toss roasted sweet potatoes with the sriracha garlic sauce until evenly coated.
  6. 6Lightly blanch or sauté sugar snap peas until crisp-tender.
  7. 7Assemble bowls with rice or quinoa (if using), sweet potatoes, snap peas, and avocado.
  8. 8Garnish with sesame seeds and green onions.
