Sriracha Garlic Sweet Potato Bowl with Avocado & Snap Peas

- 3 large sweet potatoes
- 2 tbsp olive oil
- salt
- 2 tbsp sriracha
- 1 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 2 cloves garlic
- 1 tbsp lime juice
- 2 cups sugar snap peas
- 2 whole avocado
- 2 cups rice or quinoa
- sesame seeds
- 3 stalks green onions
How to Make It
- 1Preheat oven to 425°F (220°C).
- 2Toss sweet potatoes with olive oil and salt.
- 3Roast for 20–25 minutes until tender and caramelized.
- 4In a bowl, whisk together sriracha, soy sauce, honey or maple syrup, garlic, and lime juice.
- 5Toss roasted sweet potatoes with the sriracha garlic sauce until evenly coated.
- 6Lightly blanch or sauté sugar snap peas until crisp-tender.
- 7Assemble bowls with rice or quinoa (if using), sweet potatoes, snap peas, and avocado.
- 8Garnish with sesame seeds and green onions.
