Caramelized Broccoli Peanut Noodles with Fresno Chile

- 12 oz noodles
- 1 lb broccoli florets
- 2 tbsp neutral oil
- salt
- Β½ cup peanut butter
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp brown sugar or honey
- 2 cloves garlic
- 1 tsp fresh ginger
- ΒΌ cup warm water
- 1 whole Fresno chile
- 3 stalks green onions
- 1 whole lime wedges
How to Make It
- 1Cook noodles according to package instructions.
- 2Drain and set aside.
- 3In a bowl, whisk together peanut butter, soy sauce, rice vinegar, brown sugar, garlic, ginger, and warm water until smooth.
- 4Heat oil in a large skillet or wok over high heat.
- 5Add broccoli and cook undisturbed for a few minutes to allow charring, then stir and cook until tender and caramelized.
- 6Add cooked noodles and peanut sauce to the skillet.
- 7Toss everything together until evenly coated and heated through.
- 8Remove from heat and top with Fresno chile and green onions.
- 9Serve with lime wedges on the side.
