Caramelized Broccoli Peanut Noodles with Fresno Chile

  • 12 oz noodles
  • 1 lb broccoli florets
  • 2 tbsp neutral oil
  • salt
  • Β½ cup peanut butter
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar or honey
  • 2 cloves garlic
  • 1 tsp fresh ginger
  • ΒΌ cup warm water
  • 1 whole Fresno chile
  • 3 stalks green onions
  • 1 whole lime wedges

How to Make It

  1. 1Cook noodles according to package instructions.
  2. 2Drain and set aside.
  3. 3In a bowl, whisk together peanut butter, soy sauce, rice vinegar, brown sugar, garlic, ginger, and warm water until smooth.
  4. 4Heat oil in a large skillet or wok over high heat.
  5. 5Add broccoli and cook undisturbed for a few minutes to allow charring, then stir and cook until tender and caramelized.
  6. 6Add cooked noodles and peanut sauce to the skillet.
  7. 7Toss everything together until evenly coated and heated through.
  8. 8Remove from heat and top with Fresno chile and green onions.
  9. 9Serve with lime wedges on the side.
