Charred Broccoli & Shiitake Sesame Noodles with Teriyaki Glaze

  • 12 oz spaghetti or lo mein noodles
  • 1 tbsp sesame oil
  • 4 cups broccoli florets
  • 8 oz shiitake mushrooms
  • 1 tbsp neutral oil
  • ¼ cup soy sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1 tbsp water
  • sesame seeds
  • 3 stalks green onions

How to Make It

  1. 1Cook noodles according to package instructions.
  2. 2Drain and toss with sesame oil.
  3. 3Set aside.
  4. 4Heat a large skillet or wok over medium-high heat with neutral oil.
  5. 5Add broccoli and cook until charred and tender-crisp, about 5–6 minutes.
  6. 6Add shiitake mushrooms and cook until softened and browned, about 4–5 minutes.
  7. 7In a bowl, mix soy sauce, brown sugar, garlic, ginger, and rice vinegar.
  8. 8Add sauce to the pan and bring to a simmer.
  9. 9Mix cornstarch and water to create a slurry, then stir into the sauce until thickened.
  10. 10Add cooked noodles to the pan and toss to coat evenly with the sauce and vegetables.
  11. 11Cook for another 1–2 minutes until everything is well combined and heated through.
  12. 12Serve hot, garnished with sesame seeds and green onions.
