Charred Broccoli & Shiitake Sesame Noodles with Teriyaki Glaze

- 12 oz spaghetti or lo mein noodles
- 1 tbsp sesame oil
- 4 cups broccoli florets
- 8 oz shiitake mushrooms
- 1 tbsp neutral oil
- ¼ cup soy sauce
- 2 tbsp brown sugar
- 3 cloves garlic
- 1 tbsp fresh ginger
- 1 tbsp rice vinegar
- 1 tsp cornstarch
- 1 tbsp water
- sesame seeds
- 3 stalks green onions
How to Make It
- 1Cook noodles according to package instructions.
- 2Drain and toss with sesame oil.
- 3Set aside.
- 4Heat a large skillet or wok over medium-high heat with neutral oil.
- 5Add broccoli and cook until charred and tender-crisp, about 5–6 minutes.
- 6Add shiitake mushrooms and cook until softened and browned, about 4–5 minutes.
- 7In a bowl, mix soy sauce, brown sugar, garlic, ginger, and rice vinegar.
- 8Add sauce to the pan and bring to a simmer.
- 9Mix cornstarch and water to create a slurry, then stir into the sauce until thickened.
- 10Add cooked noodles to the pan and toss to coat evenly with the sauce and vegetables.
- 11Cook for another 1–2 minutes until everything is well combined and heated through.
- 12Serve hot, garnished with sesame seeds and green onions.
