Hot Honey Glazed Salmon with Herb-Roasted Zucchini & Tomatoes

  • 4 pieces salmon fillets
  • 1 tbsp olive oil
  • salt

  • 3 tbsp honey
  • 1 tsp red pepper flakes
  • 1 tsp apple cider vinegar
  • 2 medium zucchini
  • 1 ½ cups cherry tomatoes
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • salt
  • black pepper

How to Make It

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss zucchini and cherry tomatoes with olive oil, thyme, salt, and pepper.
  3. 3Spread on a baking sheet.
  4. 4Roast vegetables for 15–20 minutes until tender and lightly caramelized.
  5. 5Meanwhile, mix honey, red pepper flakes, and apple cider vinegar to create the hot honey glaze.
  6. 6Season salmon with olive oil, salt, and pepper.
  7. 7Heat a skillet over medium-high heat and sear salmon for 3–4 minutes per side, or bake alongside vegetables for 10–12 minutes.
  8. 8Brush salmon with hot honey glaze during the last few minutes of cooking.
  9. 9Serve salmon with roasted vegetables, drizzling extra glaze over the top if desired.
