Hot Honey Glazed Salmon with Herb-Roasted Zucchini & Tomatoes

- 4 pieces salmon fillets
- 1 tbsp olive oil

- 3 tbsp honey
- 1 tsp red pepper flakes
- 1 tsp apple cider vinegar
- 2 medium zucchini
- 1 ½ cups cherry tomatoes
- 1 tbsp olive oil
- 1 tsp dried thyme

How to Make It
- 1Preheat oven to 425°F (220°C).
- 2Toss zucchini and cherry tomatoes with olive oil, thyme, salt, and pepper.
- 3Spread on a baking sheet.
- 4Roast vegetables for 15–20 minutes until tender and lightly caramelized.
- 5Meanwhile, mix honey, red pepper flakes, and apple cider vinegar to create the hot honey glaze.
- 6Season salmon with olive oil, salt, and pepper.
- 7Heat a skillet over medium-high heat and sear salmon for 3–4 minutes per side, or bake alongside vegetables for 10–12 minutes.
- 8Brush salmon with hot honey glaze during the last few minutes of cooking.
- 9Serve salmon with roasted vegetables, drizzling extra glaze over the top if desired.
