Easy Chicken Quesadillas with Chihuahua Cheese & Fresh Pico

  • 2 cups cooked chicken
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • salt
  • 3 medium roma tomatoes
  • ½ cup white or red onion
  • 1 small jalapeño
  • ½ cup cilantro
  • 1 tbsp lime juice
  • salt
  • 8 pieces flour tortillas
  • 2 cups chihuahua cheese
  • 1 tbsp butter or oil

How to Make It

  1. 1In a skillet, heat olive oil over medium heat.
  2. 2Add cooked chicken, cumin, chili powder, and salt.
  3. 3Cook for 3–4 minutes until warmed and flavorful.
  4. 4In a bowl, combine tomatoes, onion, jalapeño, cilantro, lime juice, and salt to make pico de gallo.
  5. 5Heat a skillet or griddle over medium heat.
  6. 6Place a tortilla in the skillet, sprinkle cheese evenly, then add chicken and more cheese.
  7. 7Top with another tortilla.
  8. 8Cook for 2–3 minutes per side until golden brown and cheese is melted.
  9. 9Repeat with remaining tortillas and filling.
  10. 10Slice quesadillas into wedges and serve with pico de gallo.
