Easy Chicken Quesadillas with Chihuahua Cheese & Fresh Pico

- 2 cups cooked chicken
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp chili powder
- salt
- 3 medium roma tomatoes
- ½ cup white or red onion
- 1 small jalapeño
- ½ cup cilantro
- 1 tbsp lime juice
- salt
- 8 pieces flour tortillas
- 2 cups chihuahua cheese
- 1 tbsp butter or oil
How to Make It
- 1In a skillet, heat olive oil over medium heat.
- 2Add cooked chicken, cumin, chili powder, and salt.
- 3Cook for 3–4 minutes until warmed and flavorful.
- 4In a bowl, combine tomatoes, onion, jalapeño, cilantro, lime juice, and salt to make pico de gallo.
- 5Heat a skillet or griddle over medium heat.
- 6Place a tortilla in the skillet, sprinkle cheese evenly, then add chicken and more cheese.
- 7Top with another tortilla.
- 8Cook for 2–3 minutes per side until golden brown and cheese is melted.
- 9Repeat with remaining tortillas and filling.
- 10Slice quesadillas into wedges and serve with pico de gallo.
