Southern-Style Shrimp & Sausage Sheet Pan Roast with Garlic Butter

  • 1 lb large shrimp
  • 12 oz smoked sausage
  • 1 ½ lb baby potatoes
  • 3 ears corn
  • 2 tbsp olive oil
  • 1 tsp paprika
  • salt
  • black pepper
  • 4 tbsp butter
  • 4 cloves garlic
  • 1 tbsp lemon juice
  • 2 tbsp parsley

How to Make It

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss potatoes and corn with olive oil, paprika, salt, and pepper.
  3. 3Spread on a large sheet pan.
  4. 4Roast for 20 minutes until potatoes begin to soften.
  5. 5Remove pan from oven and add sausage slices.
  6. 6Toss to combine.
  7. 7Return to oven and roast for another 10 minutes.
  8. 8Meanwhile, melt butter in a small saucepan and stir in garlic, lemon juice, and parsley.
  9. 9Remove pan from oven and add shrimp.
  10. 10Drizzle garlic butter over everything and toss gently.
  11. 11Return to oven and roast for 5–7 minutes until shrimp are pink and cooked through.
  12. 12Serve immediately, spooning extra garlic butter over the top if desired.
