Southern-Style Shrimp & Sausage Sheet Pan Roast with Garlic Butter

- 1 lb large shrimp
- 12 oz smoked sausage
- 1 ½ lb baby potatoes
- 3 ears corn
- 2 tbsp olive oil
- 1 tsp paprika
- salt
- black pepper
- 4 tbsp butter
- 4 cloves garlic
- 1 tbsp lemon juice
- 2 tbsp parsley
How to Make It
- 1Preheat oven to 425°F (220°C).
- 2Toss potatoes and corn with olive oil, paprika, salt, and pepper.
- 3Spread on a large sheet pan.
- 4Roast for 20 minutes until potatoes begin to soften.
- 5Remove pan from oven and add sausage slices.
- 6Toss to combine.
- 7Return to oven and roast for another 10 minutes.
- 8Meanwhile, melt butter in a small saucepan and stir in garlic, lemon juice, and parsley.
- 9Remove pan from oven and add shrimp.
- 10Drizzle garlic butter over everything and toss gently.
- 11Return to oven and roast for 5–7 minutes until shrimp are pink and cooked through.
- 12Serve immediately, spooning extra garlic butter over the top if desired.
