Shrimp Pomodoro Pasta with Fresh Tomatoes, Parmesan & Garlic Bread

  • 12 oz spaghetti or linguine
  • 1 lb large shrimp
  • 1 tbsp olive oil
  • salt
  • 4 medium fresh tomatoes
  • 4 cloves garlic
  • 2 tbsp olive oil
  • ½ tsp red pepper flakes
  • ½ cup fresh basil
  • salt
  • 1 loaf baguette or Italian bread
  • 3 tbsp butter
  • 2 cloves garlic
  • 1 tbsp parsley
  • ½ cup parmesan cheese

How to Make It

  1. 1Cook pasta according to package instructions.
  2. 2Reserve 1/2 cup pasta water, then drain.
  3. 3Heat olive oil in a skillet over medium-high heat.
  4. 4Season shrimp with salt and cook for 2–3 minutes per side until pink.
  5. 5Remove and set aside.
  6. 6In the same pan, add olive oil and garlic.
  7. 7Cook until fragrant.
  8. 8Add fresh tomatoes, red pepper flakes, and salt.
  9. 9Simmer for 10–15 minutes until slightly thickened.
  10. 10Stir in basil and return shrimp to the sauce.
  11. 11Add cooked pasta and a splash of reserved pasta water, tossing to coat evenly.
  12. 12Preheat oven to 375°F (190°C).
  13. 13Mix butter, garlic, and parsley, spread on bread, and toast until golden.
  14. 14Serve pasta topped with parmesan cheese and garlic bread on the side.
