Shrimp Pomodoro Pasta with Fresh Tomatoes, Parmesan & Garlic Bread

- 12 oz spaghetti or linguine
- 1 lb large shrimp
- 1 tbsp olive oil
- salt
- 4 medium fresh tomatoes
- 4 cloves garlic
- 2 tbsp olive oil
- ½ tsp red pepper flakes
- ½ cup fresh basil
- salt
- 1 loaf baguette or Italian bread
- 3 tbsp butter
- 2 cloves garlic
- 1 tbsp parsley
- ½ cup parmesan cheese
How to Make It
- 1Cook pasta according to package instructions.
- 2Reserve 1/2 cup pasta water, then drain.
- 3Heat olive oil in a skillet over medium-high heat.
- 4Season shrimp with salt and cook for 2–3 minutes per side until pink.
- 5Remove and set aside.
- 6In the same pan, add olive oil and garlic.
- 7Cook until fragrant.
- 8Add fresh tomatoes, red pepper flakes, and salt.
- 9Simmer for 10–15 minutes until slightly thickened.
- 10Stir in basil and return shrimp to the sauce.
- 11Add cooked pasta and a splash of reserved pasta water, tossing to coat evenly.
- 12Preheat oven to 375°F (190°C).
- 13Mix butter, garlic, and parsley, spread on bread, and toast until golden.
- 14Serve pasta topped with parmesan cheese and garlic bread on the side.
