Crispy Parmesan Pork Chop with Fennel Gratin & Roasted Zucchini

- 4 pieces pork chops
- 1 cup parmesan cheese
- ¾ cup panko breadcrumbs
- 2 large eggs
- 2 tbsp olive oil
- salt

- 2 medium fennel bulbs
- 1 cup heavy cream
- ½ cup parmesan cheese
- 2 cloves garlic
- 1 tbsp butter
- salt
- 3 medium zucchini
- 1 tbsp olive oil
- 2 cloves garlic

How to Make It
- 1Preheat oven to 400°F (200°C).
- 2In a greased baking dish, layer fennel with garlic, cream, parmesan, butter, and salt.
- 3Bake for 30–35 minutes until tender and golden.
- 4Toss zucchini with olive oil, garlic, and salt.
- 5Roast on a separate baking sheet for 20–25 minutes until tender.
- 6Season pork chops with salt and pepper.
- 7Dip pork chops in beaten eggs, then coat with a mixture of parmesan and panko.
- 8Heat olive oil in a skillet over medium heat and cook pork chops for 4–5 minutes per side until golden and cooked through.
- 9Serve pork chops with fennel gratin and roasted zucchini.
