Crispy Parmesan Pork Chop with Fennel Gratin & Roasted Zucchini

  • 4 pieces pork chops
  • 1 cup parmesan cheese
  • ¾ cup panko breadcrumbs
  • 2 large eggs
  • 2 tbsp olive oil
  • salt
  • black pepper
  • 2 medium fennel bulbs
  • 1 cup heavy cream
  • ½ cup parmesan cheese
  • 2 cloves garlic
  • 1 tbsp butter
  • salt
  • 3 medium zucchini
  • 1 tbsp olive oil
  • 2 cloves garlic
  • salt

How to Make It

  1. 1Preheat oven to 400°F (200°C).
  2. 2In a greased baking dish, layer fennel with garlic, cream, parmesan, butter, and salt.
  3. 3Bake for 30–35 minutes until tender and golden.
  4. 4Toss zucchini with olive oil, garlic, and salt.
  5. 5Roast on a separate baking sheet for 20–25 minutes until tender.
  6. 6Season pork chops with salt and pepper.
  7. 7Dip pork chops in beaten eggs, then coat with a mixture of parmesan and panko.
  8. 8Heat olive oil in a skillet over medium heat and cook pork chops for 4–5 minutes per side until golden and cooked through.
  9. 9Serve pork chops with fennel gratin and roasted zucchini.
