Grilled Pork Chops with Whole Grain Dijon Cream Sauce, Red Potatoes & Green Beans

- 4 pieces bone-in pork chops
- 1 tbsp olive oil

- 2 tbsp whole grain Dijon mustard
- ½ cup heavy cream
- ¼ cup chicken broth
- 2 cloves garlic
- 1 tbsp butter
- 2 lb red potatoes
- 1 tbsp olive oil

- 3 cups green beans
- 1 tbsp olive oil

How to Make It
- 1Preheat oven to 425°F (220°C).
- 2Toss red potatoes with olive oil, salt, and pepper.
- 3Spread on a baking sheet and roast for 25–30 minutes until golden and tender.
- 4Season pork chops with olive oil, salt, and pepper.
- 5Preheat grill or grill pan to medium-high heat.
- 6Grill pork chops for 4–5 minutes per side until cooked through.
- 7Remove and rest.
- 8In a saucepan, melt butter over medium heat.
- 9Add garlic and cook until fragrant.
- 10Stir in chicken broth and cream, bringing to a gentle simmer.
- 11Add Dijon mustard and whisk until smooth.
- 12Simmer until slightly thickened.
- 13Sauté or steam green beans with olive oil and salt until tender-crisp, about 5–7 minutes.
- 14Serve pork chops topped with Dijon sauce alongside roasted potatoes and green beans.
