Grilled Pork Chops with Whole Grain Dijon Cream Sauce, Red Potatoes & Green Beans

  • 4 pieces bone-in pork chops
  • 1 tbsp olive oil
  • salt
  • black pepper
  • 2 tbsp whole grain Dijon mustard
  • ½ cup heavy cream
  • ¼ cup chicken broth
  • 2 cloves garlic
  • 1 tbsp butter
  • 2 lb red potatoes
  • 1 tbsp olive oil
  • salt

  • 3 cups green beans
  • 1 tbsp olive oil
  • salt

How to Make It

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss red potatoes with olive oil, salt, and pepper.
  3. 3Spread on a baking sheet and roast for 25–30 minutes until golden and tender.
  4. 4Season pork chops with olive oil, salt, and pepper.
  5. 5Preheat grill or grill pan to medium-high heat.
  6. 6Grill pork chops for 4–5 minutes per side until cooked through.
  7. 7Remove and rest.
  8. 8In a saucepan, melt butter over medium heat.
  9. 9Add garlic and cook until fragrant.
  10. 10Stir in chicken broth and cream, bringing to a gentle simmer.
  11. 11Add Dijon mustard and whisk until smooth.
  12. 12Simmer until slightly thickened.
  13. 13Sauté or steam green beans with olive oil and salt until tender-crisp, about 5–7 minutes.
  14. 14Serve pork chops topped with Dijon sauce alongside roasted potatoes and green beans.
