Sweet Soy–Glazed Bone-In Pork Chops with Sesame Chinese Broccoli

  • 4 pieces bone-in pork chops
  • salt
  • black pepper
  • 1 tbsp neutral oil
  • ¼ cup soy sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1 lb chinese broccoli
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • sesame seeds
  • 2 stalks green onions

How to Make It

  1. 1Season pork chops with salt and black pepper on both sides.
  2. 2Heat oil in a large skillet over medium-high heat.
  3. 3Sear pork chops for 4–5 minutes per side until browned and cooked through.
  4. 4Remove and set aside.
  5. 5In the same pan, add garlic and ginger, sautéing briefly until fragrant.
  6. 6Add soy sauce, brown sugar, and rice vinegar.
  7. 7Stir and bring to a simmer.
  8. 8Mix cornstarch and water to create a slurry, then add to the pan.
  9. 9Cook until the glaze thickens.
  10. 10Return pork chops to the pan and coat with the glaze.
  11. 11Simmer for 2–3 minutes until glossy.
  12. 12Meanwhile, steam or blanch Chinese broccoli until tender-crisp, about 3–4 minutes.
  13. 13Toss broccoli with sesame oil and soy sauce.
  14. 14Serve pork chops with sesame Chinese broccoli and spoon extra glaze over the top.
  15. 15Garnish with sesame seeds and green onions if desired.
