Sweet Chili Chicken Lettuce Cups with Crunchy Radish & Water Chestnut

  • 1 lb ground chicken
  • 1 tbsp neutral oil
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • ¼ cup sweet chili sauce
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 can water chestnuts
  • 4 medium radishes
  • 3 stalks green onions
  • 12 leaves butter lettuce or romaine leaves
  • sesame seeds
  • cilantro

How to Make It

  1. 1Heat oil in a large skillet over medium heat.
  2. 2Add ground chicken and cook until browned, breaking it apart as it cooks.
  3. 3Add garlic and ginger and cook for 1–2 minutes until fragrant.
  4. 4Stir in sweet chili sauce, soy sauce, and lime juice.
  5. 5Cook until heated through.
  6. 6Add chopped water chestnuts and green onions, stirring to combine.
  7. 7Remove from heat.
  8. 8Spoon chicken mixture into lettuce leaves.
  9. 9Top with sliced radishes and additional green onions.
  10. 10Garnish with sesame seeds or cilantro if desired.
  11. 11Serve immediately.
