Sweet Chili Chicken Lettuce Cups with Crunchy Radish & Water Chestnut

- 1 lb ground chicken
- 1 tbsp neutral oil
- 3 cloves garlic
- 1 tbsp fresh ginger
- ¼ cup sweet chili sauce
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 can water chestnuts
- 4 medium radishes
- 3 stalks green onions
- 12 leaves butter lettuce or romaine leaves
- sesame seeds
- cilantro
How to Make It
- 1Heat oil in a large skillet over medium heat.
- 2Add ground chicken and cook until browned, breaking it apart as it cooks.
- 3Add garlic and ginger and cook for 1–2 minutes until fragrant.
- 4Stir in sweet chili sauce, soy sauce, and lime juice.
- 5Cook until heated through.
- 6Add chopped water chestnuts and green onions, stirring to combine.
- 7Remove from heat.
- 8Spoon chicken mixture into lettuce leaves.
- 9Top with sliced radishes and additional green onions.
- 10Garnish with sesame seeds or cilantro if desired.
- 11Serve immediately.
