Sizzling Chicken Fajitas with Chihuahua Cheese & Cilantro Cream

  • 1 ½ lb chicken breast or thighs
  • 3 medium bell peppers
  • 1 large onion
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp lime juice
  • salt
  • ½ cup sour cream
  • ½ cup cilantro
  • 1 tbsp lime juice
  • 1 clove garlic
  • 8 pieces flour or corn tortillas
  • 1 cup chihuahua cheese

How to Make It

  1. 1In a bowl, mix chicken with olive oil, chili powder, cumin, paprika, lime juice, and salt.
  2. 2Heat a large skillet over medium-high heat.
  3. 3Cook chicken until browned and cooked through.
  4. 4Remove and set aside.
  5. 5In the same skillet, sauté peppers and onions until softened and slightly charred.
  6. 6Return chicken to the skillet and toss with vegetables.
  7. 7In a small bowl, mix sour cream, cilantro, lime juice, and garlic to make the cilantro cream.
  8. 8Warm tortillas in a skillet or oven.
  9. 9Fill tortillas with chicken mixture, sprinkle with cheese, and drizzle with cilantro cream.
  10. 10Serve immediately.
