Sizzling Chicken Fajitas with Chihuahua Cheese & Cilantro Cream

- 1 ½ lb chicken breast or thighs
- 3 medium bell peppers
- 1 large onion
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tbsp lime juice
- salt
- ½ cup sour cream
- ½ cup cilantro
- 1 tbsp lime juice
- 1 clove garlic
- 8 pieces flour or corn tortillas
- 1 cup chihuahua cheese
How to Make It
- 1In a bowl, mix chicken with olive oil, chili powder, cumin, paprika, lime juice, and salt.
- 2Heat a large skillet over medium-high heat.
- 3Cook chicken until browned and cooked through.
- 4Remove and set aside.
- 5In the same skillet, sauté peppers and onions until softened and slightly charred.
- 6Return chicken to the skillet and toss with vegetables.
- 7In a small bowl, mix sour cream, cilantro, lime juice, and garlic to make the cilantro cream.
- 8Warm tortillas in a skillet or oven.
- 9Fill tortillas with chicken mixture, sprinkle with cheese, and drizzle with cilantro cream.
- 10Serve immediately.
