Southwest Beef & Pepper Tamale Pie with Cheddar Cornbread Crust

- 1 lb ground beef
- 2 medium bell peppers
- 1 small onion
- 2 cloves garlic
- 1 cup crushed tomatoes
- 2 tbsp tomato paste
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tbsp olive oil
- salt
- 1 cup cornmeal
- ½ cup all-purpose flour
- 1 tsp baking powder
- ¾ cup milk
- 1 large egg
- 1 cup cheddar cheese
- 2 tbsp butter
How to Make It
- 1Preheat oven to 375°F (190°C).
- 2Heat olive oil in a skillet over medium heat.
- 3Cook onion, garlic, and bell peppers until softened.
- 4Add ground beef and cook until browned.
- 5Drain excess fat if needed.
- 6Stir in crushed tomatoes, tomato paste, chili powder, cumin, and salt.
- 7Simmer for 10 minutes until thickened.
- 8Transfer beef mixture to a baking dish.
- 9In a bowl, whisk together cornmeal, flour, and baking powder.
- 10Add milk, egg, melted butter, and cheddar cheese.
- 11Stir until combined.
- 12Spread cornbread batter evenly over the beef mixture.
- 13Bake for 20–25 minutes until the crust is golden and cooked through.
- 14Let cool slightly before serving.
