Southwest Beef & Pepper Tamale Pie with Cheddar Cornbread Crust

  • 1 lb ground beef
  • 2 medium bell peppers
  • 1 small onion
  • 2 cloves garlic
  • 1 cup crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tbsp olive oil
  • salt
  • 1 cup cornmeal
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • ¾ cup milk
  • 1 large egg
  • 1 cup cheddar cheese
  • 2 tbsp butter

How to Make It

  1. 1Preheat oven to 375°F (190°C).
  2. 2Heat olive oil in a skillet over medium heat.
  3. 3Cook onion, garlic, and bell peppers until softened.
  4. 4Add ground beef and cook until browned.
  5. 5Drain excess fat if needed.
  6. 6Stir in crushed tomatoes, tomato paste, chili powder, cumin, and salt.
  7. 7Simmer for 10 minutes until thickened.
  8. 8Transfer beef mixture to a baking dish.
  9. 9In a bowl, whisk together cornmeal, flour, and baking powder.
  10. 10Add milk, egg, melted butter, and cheddar cheese.
  11. 11Stir until combined.
  12. 12Spread cornbread batter evenly over the beef mixture.
  13. 13Bake for 20–25 minutes until the crust is golden and cooked through.
