Herb-Roasted Pork Tenderloin with Apple Cider Pan Sauce & Broccoli Mash

- 1 ½ lb pork tenderloin
- 1 tbsp olive oil
- 1 tbsp fresh thyme
- 1 tsp fresh rosemary
- 3 cloves garlic
- salt
- black pepper
- 1 cup apple cider
- ½ cup chicken broth
- 1 tsp dijon mustard
- 1 tbsp butter
- 1 large head broccoli
- 2 tbsp butter
- ¼ cup milk
- salt
How to Make It
- 1Preheat oven to 400°F (200°C).
- 2Rub pork tenderloin with olive oil, thyme, rosemary, garlic, salt, and pepper.
- 3Place pork on a baking sheet and roast for 20–25 minutes until internal temperature reaches 145°F (63°C).
- 4Let rest.
- 5In a saucepan, combine apple cider and chicken broth.
- 6Simmer until reduced by about half.
- 7Whisk in Dijon mustard and butter until smooth and slightly thickened.
- 8Meanwhile, steam or boil broccoli until tender.
- 9Mash broccoli with butter, milk, and salt until smooth or slightly chunky.
- 10Slice pork and serve with apple cider pan sauce and broccoli mash.
