Herb-Roasted Pork Tenderloin with Apple Cider Pan Sauce & Broccoli Mash

  • 1 ½ lb pork tenderloin
  • 1 tbsp olive oil
  • 1 tbsp fresh thyme
  • 1 tsp fresh rosemary
  • 3 cloves garlic
  • salt
  • black pepper
  • 1 cup apple cider
  • ½ cup chicken broth
  • 1 tsp dijon mustard
  • 1 tbsp butter
  • 1 large head broccoli
  • 2 tbsp butter
  • ¼ cup milk
  • salt

How to Make It

  1. 1Preheat oven to 400°F (200°C).
  2. 2Rub pork tenderloin with olive oil, thyme, rosemary, garlic, salt, and pepper.
  3. 3Place pork on a baking sheet and roast for 20–25 minutes until internal temperature reaches 145°F (63°C).
  4. 4Let rest.
  5. 5In a saucepan, combine apple cider and chicken broth.
  6. 6Simmer until reduced by about half.
  7. 7Whisk in Dijon mustard and butter until smooth and slightly thickened.
  8. 8Meanwhile, steam or boil broccoli until tender.
  9. 9Mash broccoli with butter, milk, and salt until smooth or slightly chunky.
  10. 10Slice pork and serve with apple cider pan sauce and broccoli mash.
