Steakhouse Seared Sirloin with Cheddar Twice-Baked Potatoes

  • 4 pieces sirloin steak
  • 1 tbsp olive oil
  • salt
  • black pepper
  • 4 large russet potatoes
  • 3 tbsp butter
  • ½ cup sour cream
  • 1 cup cheddar cheese
  • ¼ cup milk
  • 3 stalks green onions
  • salt
  • black pepper

How to Make It

  1. 1Preheat oven to 400°F (200°C).
  2. 2Bake whole potatoes for 45–50 minutes until tender.
  3. 3Cut potatoes in half lengthwise and scoop out the flesh into a bowl, leaving skins intact.
  4. 4Mash potato flesh with butter, sour cream, milk, cheddar cheese, green onions, salt, and pepper.
  5. 5Spoon mixture back into potato skins and return to oven for 10–15 minutes until heated through and slightly golden.
  6. 6Meanwhile, season steaks with olive oil, salt, and pepper.
  7. 7Heat a skillet over medium-high heat and sear steaks for 3–5 minutes per side until desired doneness.
  8. 8Let rest.
  9. 9Serve steaks alongside twice-baked potatoes.
