Steakhouse Seared Sirloin with Cheddar Twice-Baked Potatoes

- 4 pieces sirloin steak
- 1 tbsp olive oil
- salt
- black pepper
- 4 large russet potatoes
- 3 tbsp butter
- ½ cup sour cream
- 1 cup cheddar cheese
- ¼ cup milk
- 3 stalks green onions
- salt
- black pepper
How to Make It
- 1Preheat oven to 400°F (200°C).
- 2Bake whole potatoes for 45–50 minutes until tender.
- 3Cut potatoes in half lengthwise and scoop out the flesh into a bowl, leaving skins intact.
- 4Mash potato flesh with butter, sour cream, milk, cheddar cheese, green onions, salt, and pepper.
- 5Spoon mixture back into potato skins and return to oven for 10–15 minutes until heated through and slightly golden.
- 6Meanwhile, season steaks with olive oil, salt, and pepper.
- 7Heat a skillet over medium-high heat and sear steaks for 3–5 minutes per side until desired doneness.
- 8Let rest.
- 9Serve steaks alongside twice-baked potatoes.
