Urban Bistro Steak with Crispy Parmesan Potatoes & Sautéed Mushrooms

  • 4 pieces sirloin steak
  • 1 tbsp olive oil
  • salt
  • black pepper
  • 2 lb baby potatoes
  • 2 tbsp olive oil
  • ½ cup parmesan cheese
  • 1 tsp garlic powder
  • salt
  • black pepper
  • 8 oz cremini mushrooms
  • 2 tbsp butter
  • 2 cloves garlic
  • 1 tsp thyme
  • salt
  • black pepper

How to Make It

  1. 1Preheat oven to 425°F (220°C).
  2. 2Toss potatoes with olive oil, parmesan, garlic powder, salt, and pepper.
  3. 3Spread on a baking sheet cut-side down.
  4. 4Roast potatoes for 25–30 minutes until crispy and golden.
  5. 5Season steaks with olive oil, salt, and pepper.
  6. 6Heat a skillet over medium-high heat and sear steaks for 4–5 minutes per side until desired doneness.
  7. 7Let rest.
  8. 8In another pan, melt butter over medium heat.
  9. 9Add mushrooms and cook until browned and softened.
  10. 10Add garlic and thyme to mushrooms and cook for 1–2 minutes.
  11. 11Season with salt and pepper.
  12. 12Plate steaks with crispy parmesan potatoes and sautéed mushrooms.
  13. 13Serve immediately.
