Urban Bistro Steak with Crispy Parmesan Potatoes & Sautéed Mushrooms

- 4 pieces sirloin steak
- 1 tbsp olive oil
- salt
- black pepper
- 2 lb baby potatoes
- 2 tbsp olive oil
- ½ cup parmesan cheese
- 1 tsp garlic powder
- salt

- 8 oz cremini mushrooms
- 2 tbsp butter
- 2 cloves garlic
- 1 tsp thyme
- salt
- black pepper
How to Make It
- 1Preheat oven to 425°F (220°C).
- 2Toss potatoes with olive oil, parmesan, garlic powder, salt, and pepper.
- 3Spread on a baking sheet cut-side down.
- 4Roast potatoes for 25–30 minutes until crispy and golden.
- 5Season steaks with olive oil, salt, and pepper.
- 6Heat a skillet over medium-high heat and sear steaks for 4–5 minutes per side until desired doneness.
- 7Let rest.
- 8In another pan, melt butter over medium heat.
- 9Add mushrooms and cook until browned and softened.
- 10Add garlic and thyme to mushrooms and cook for 1–2 minutes.
- 11Season with salt and pepper.
- 12Plate steaks with crispy parmesan potatoes and sautéed mushrooms.
- 13Serve immediately.
