Mediterranean Chicken Salad with Creamy Feta-Oregano Dressing

  • 2 large chicken breast
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 2 cloves garlic
  • 1 head romaine lettuce
  • 1 medium cucumber
  • 1 cup cherry tomatoes
  • ¼ cup red onion
  • ½ cup kalamata olives
  • ½ cup feta cheese
  • ¼ cup greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • salt
  • black pepper

How to Make It

  1. 1Preheat a grill pan or skillet over medium-high heat.
  2. 2Season chicken with olive oil, oregano, garlic, salt, and pepper.
  3. 3Cook chicken for 6–7 minutes per side until fully cooked.
  4. 4Let rest, then slice.
  5. 5In a large bowl, combine lettuce, cucumber, tomatoes, red onion, and olives.
  6. 6Make the dressing by whisking feta, yogurt, olive oil, lemon juice, and oregano until creamy.
  7. 7Add sliced chicken to the salad and drizzle with dressing.
  8. 8Toss gently to combine and adjust seasoning if needed.
  9. 9Serve immediately, optionally garnished with extra feta and oregano.
