Mediterranean Chicken Salad with Creamy Feta-Oregano Dressing

- 2 large chicken breast
- 1 tbsp olive oil
- 1 tsp dried oregano
- 2 cloves garlic
- 1 head romaine lettuce
- 1 medium cucumber
- 1 cup cherry tomatoes
- ¼ cup red onion
- ½ cup kalamata olives
- ½ cup feta cheese
- ¼ cup greek yogurt
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- salt
- black pepper
How to Make It
- 1Preheat a grill pan or skillet over medium-high heat.
- 2Season chicken with olive oil, oregano, garlic, salt, and pepper.
- 3Cook chicken for 6–7 minutes per side until fully cooked.
- 4Let rest, then slice.
- 5In a large bowl, combine lettuce, cucumber, tomatoes, red onion, and olives.
- 6Make the dressing by whisking feta, yogurt, olive oil, lemon juice, and oregano until creamy.
- 7Add sliced chicken to the salad and drizzle with dressing.
- 8Toss gently to combine and adjust seasoning if needed.
- 9Serve immediately, optionally garnished with extra feta and oregano.
