Chopped Chicken Salad with Avocado Cream Dressing & Smoked Almonds

- 2 cups cooked chicken breast
- 1 large head romaine lettuce
- 1 cup cherry tomatoes
- 1 medium cucumber
- ΒΌ cup red onion
- Β½ cup blue cheese
- Β½ cup smoked almonds
- 1 large avocado
- ΒΌ cup sour cream or Greek yogurt
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1 clove garlic
- salt
How to Make It
- 1In a blender or food processor, combine avocado, sour cream or yogurt, lime juice, olive oil, garlic, and salt.
- 2Blend until smooth and creamy.
- 3In a large bowl, combine chicken, lettuce, tomatoes, cucumber, and red onion.
- 4Drizzle dressing over the salad and toss to coat evenly.
- 5Top with blue cheese and smoked almonds.
- 6Serve immediately.
