Chopped Chicken Salad with Avocado Cream Dressing & Smoked Almonds

  • 2 cups cooked chicken breast
  • 1 large head romaine lettuce
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • ΒΌ cup red onion
  • Β½ cup blue cheese
  • Β½ cup smoked almonds
  • 1 large avocado
  • ΒΌ cup sour cream or Greek yogurt
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 clove garlic
  • salt

How to Make It

  1. 1In a blender or food processor, combine avocado, sour cream or yogurt, lime juice, olive oil, garlic, and salt.
  2. 2Blend until smooth and creamy.
  3. 3In a large bowl, combine chicken, lettuce, tomatoes, cucumber, and red onion.
  4. 4Drizzle dressing over the salad and toss to coat evenly.
  5. 5Top with blue cheese and smoked almonds.
  6. 6Serve immediately.
