Spicy Buffalo Turkey Meatball Salad with Celery & Blue Cheese Crumbles

- 1 lb ground turkey
- 1 large egg
- ½ cup breadcrumbs
- 2 cloves garlic
- 1 tsp onion powder
- salt
- black pepper
- ¼ cup hot sauce
- 2 tbsp butter
- 1 head romaine lettuce
- 2 stalks celery
- 1 cup carrots
- ½ cup blue cheese
- ½ cup ranch dressing
How to Make It
- 1Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2In a bowl, combine ground turkey, egg, breadcrumbs, garlic, onion powder, salt, and pepper.
- 3Mix until just combined.
- 4Form mixture into small meatballs and place on the baking sheet.
- 5Bake for 15–18 minutes until cooked through and lightly browned.
- 6In a small saucepan, melt butter and stir in hot sauce to create buffalo sauce.
- 7Toss cooked meatballs in the buffalo sauce until well coated.
- 8In a large bowl, combine lettuce, celery, and carrots.
- 9Top salad with buffalo meatballs and blue cheese crumbles.
- 10Drizzle with ranch dressing if desired and toss lightly before serving.
