Spicy Buffalo Turkey Meatball Salad with Celery & Blue Cheese Crumbles

  • 1 lb ground turkey
  • 1 large egg
  • ½ cup breadcrumbs
  • 2 cloves garlic
  • 1 tsp onion powder
  • salt
  • black pepper
  • ¼ cup hot sauce
  • 2 tbsp butter
  • 1 head romaine lettuce
  • 2 stalks celery
  • 1 cup carrots
  • ½ cup blue cheese
  • ½ cup ranch dressing

How to Make It

  1. 1Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2In a bowl, combine ground turkey, egg, breadcrumbs, garlic, onion powder, salt, and pepper.
  3. 3Mix until just combined.
  4. 4Form mixture into small meatballs and place on the baking sheet.
  5. 5Bake for 15–18 minutes until cooked through and lightly browned.
  6. 6In a small saucepan, melt butter and stir in hot sauce to create buffalo sauce.
  7. 7Toss cooked meatballs in the buffalo sauce until well coated.
  8. 8In a large bowl, combine lettuce, celery, and carrots.
  9. 9Top salad with buffalo meatballs and blue cheese crumbles.
  10. 10Drizzle with ranch dressing if desired and toss lightly before serving.
