Crispy Caesar Salad Pizza with Roasted Portobello & Two Cheeses

  • 1 lb pizza dough
  • 1 tbsp olive oil
  • 2 large portobello mushrooms
  • 1 ½ cups mozzarella cheese
  • ½ cup parmesan cheese
  • 2 cloves garlic
  • 3 cups romaine lettuce
  • ½ cup caesar dressing
  • ¼ cup parmesan cheese
  • 1 cup croutons
  • black pepper

How to Make It

  1. 1Preheat oven to 475°F (245°C) or as high as your oven allows.
  2. 2Roll out pizza dough onto a baking sheet or pizza stone.
  3. 3Brush dough lightly with olive oil and sprinkle with minced garlic.
  4. 4Top with mozzarella, parmesan, and sliced portobello mushrooms.
  5. 5Bake for 12–15 minutes until crust is golden and cheese is bubbly.
  6. 6While pizza bakes, toss romaine lettuce with Caesar dressing, parmesan, and croutons.
  7. 7Remove pizza from oven and let cool slightly.
  8. 8Top pizza with dressed Caesar salad.
  9. 9Finish with cracked black pepper and additional parmesan if desired.
  10. 10Slice and serve immediately.
