Hearty Lentil & Mushroom Veggie Burger with Fresh Green Salad

- 1 ½ cups cooked lentils
- 8 oz cremini mushrooms
- ½ cup onion
- 2 cloves garlic
- ½ cup breadcrumbs
- 1 large egg
- 1 tbsp soy sauce
- 1 tbsp olive oil
- salt
- black pepper
- 4 cups mixed greens
- 1 medium cucumber
- 2 tbsp olive oil
- 1 tbsp lemon juice
- salt
How to Make It
- 1Heat olive oil in a skillet over medium heat.
- 2Add mushrooms and onion and cook until softened and moisture evaporates.
- 3Add garlic and cook for 1 minute.
- 4Remove from heat and let cool slightly.
- 5In a bowl, mash lentils slightly, then mix with mushroom mixture, breadcrumbs, egg, soy sauce, salt, and pepper.
- 6Form mixture into 4 burger patties.
- 7Cook patties in a skillet over medium heat for 4–5 minutes per side until browned and firm.
- 8In a bowl, toss mixed greens and cucumber with olive oil, lemon juice, and salt.
- 9Serve veggie burgers with green salad on the side.
