Hearty Lentil & Mushroom Veggie Burger with Fresh Green Salad

  • 1 ½ cups cooked lentils
  • 8 oz cremini mushrooms
  • ½ cup onion
  • 2 cloves garlic
  • ½ cup breadcrumbs
  • 1 large egg
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • salt
  • black pepper
  • 4 cups mixed greens
  • 1 medium cucumber
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • salt

How to Make It

  1. 1Heat olive oil in a skillet over medium heat.
  2. 2Add mushrooms and onion and cook until softened and moisture evaporates.
  3. 3Add garlic and cook for 1 minute.
  4. 4Remove from heat and let cool slightly.
  5. 5In a bowl, mash lentils slightly, then mix with mushroom mixture, breadcrumbs, egg, soy sauce, salt, and pepper.
  6. 6Form mixture into 4 burger patties.
  7. 7Cook patties in a skillet over medium heat for 4–5 minutes per side until browned and firm.
  8. 8In a bowl, toss mixed greens and cucumber with olive oil, lemon juice, and salt.
  9. 9Serve veggie burgers with green salad on the side.
